Here's a tasty guacamole recipe with added crunch. This recipe "stretches" those avocados which are so expensive these days, while adding a bunch of nutrients through all the extra veggies. I made this yesterday for our Labor Day BBQ and the bowl was licked clean. Guacamole is a great appetizer while you're waiting for all that meat to cook, plus it's a lot healthier than a cheese dip. It's best to buy the avocados several days before and get them while they're still firm and green. Put them in a paper bag in a warm spot and then you can be sure they'll be just right when it comes time to make your guacamole.
Deluxe Guacamole
About 4 avocados
(Although I'm listing them first, it's best to wait to open them up till you have the rest of your ingredients ready so they don't turn brown.)
2 Roma tomatoes (fine diced)
A couple of cloves of garlic (fine diced)
1 small onion, or a few spring onions (chopped or sliced)
1 can or organic corn
(or if you have fresh corn u can cut right off the cob, it tastes even better!)
2 roasted red peppers
(although roasted fresh ones is delish it's a lot easier to buy a jar)
The juice of 3 limes
1 tsp of cumin
About 1/4 cup of chopped fresh cilantro
1 TB of chili powder
(or we carry a "Fiesta" seasoning at Organic Harvest which spices it up perfectly)
Salt (to taste)
A couple of tablespoons of hot sauce of your choice
Then get yourself some healthy chips (try the lentil, hummus, rice, or multi-grain chips), and enjoy!
